Оценка безопасности допустимых уровней содержания L. monocytogenes в пищевых продуктах по критериям риска здоровью населения

Аннотация: 

Изложены результаты сравнительной оценки риска возникновения листериоза, связанного c потреблением пищевых продуктов с содержанием L. monocytogenes на уровне нормативов стран Таможенного союза и нормативов Комиссии Codex Alimentarius и Европейского союза при обращении продуктов на рынке. Установлено, что при экспозиции на уровне гигиенических нормативов стран Таможенного союза (отсутствие L. monocytogenes в 25 граммах пищевых продуктов) риск для здоровья будет не выше предельно допустимого. Принятие нормативов Комиссии Codex Alimentarius и Европейского союза (100 КОЕ L. monocytogenes/г при обращении на рынке) может привести к недопустимым уровням риска как для населения Российской Федерации в целом, так и для наиболее чувствительных групп.
