Abstract: 

Based on the data obtained by social and hygiene monitoring and data provided by the Irkutsk Region Department of the Federal Service on State Statistics, we studied food consumption in the Irkutsk region and the results of the monitoring work of the service on chemical and microbiological safety of raw food and food products, calculated the levels of individual carcinogenic risk and a non-carcinogenic hazard from exposure to chemical substances via foods, we also analyzed the incidence of foodborne diseases and the incidence of health disorders connected to the effects on critical organs and systems.
